Black Bean and Rice Burritos

Ingredients:
  • about 6 cups cooked white or brown rice
  • 1 can black beans or 2 if you wish
  • 2 cans diced tomatoes, with chili seasoning (also known as "Chili Ready")
  • 1 cup frozen corn kernels
  • 1 small diced onion
  • Cheddar cheese 
  • tortillas
  • any other toppings you may want - chipotle sauce, taco sauce, sour cream, siracha, lettuce, etc

First you have to get your rice cooked, this takes the longest so get it done first. You can either use a rice cooker or a regular pot. Either way its 1 part uncooked rice, 2 parts water.

Afterwards, put the tomatoes, onion, corn kernels, and black beans in a pot and warm them up. Mix in the cooked rice.

Serve in tortillas with cheese and other toppings.

These things are pretty filling.
